It’s a nerve (well I’m assuming) towards the top on the back of the hind legs. Usually they don’t make sounds this “dramatic,” but dogs do it as well. Most of the time the cat’ll try to lick because they cannot normally clean the back of their hind legs. My manx cat usually did flips and noises like this, my other cats usually just lick and paw the air
